OSTERIA 16 is a Danish cookbook by the restaurant of the same name in Vesterbro, Copenhagen.
Created by chef Morten Kaltoft and artist Emil Alsbo, Osteria Cookbook No 1 contains 80 Italian recipes with a focus on seasonal ingredients, distinct flavours and a simple, unpretentious cooking style.
The recipes are divided into antipasti, polenta, pasta, risotto, pizza, bread, dessert and classic Italian basic recipes. The meals are inspired by family style serving, where the entire table shares the food in a spirit that reflects the restaurant's relaxed and inclusive atmosphere.
Morten Kaltoft previously working at the Michelin restaurant Era Ora and combines technical knowledge with accessible flavours. Alsbo's photographs capture both the dishes and the environment, from the restaurant's kitchen to Italian markets and street environments.
