The restaurant's connection with Kyoto dates back to 2009 when three Michelin-starred chef Rene Redzepi visited the city at the invitation of renowned Japanese chef Murata-san, and this relationship with Japan has developed ever since, leading to a first Noma pop-up in Tokyo in 2015 and the development of an extensive network of craftspeople, artisans, chefs, farmers, foragers and more throughout Japan. The idea of a post-pandemic pop-up in Kyoto took over three years to realise and led to a very large Noma team visiting Kyoto in 2023 who individually and collectively embarked on day trips, weekend excursions and dedicated exploration into Kyoto’s vibrant restaurant, art, ramen and coffee scenes to uncover and illuminate special places worthy of experiencing.
